What an honor to have been among the first custome What an honor to have been among the first customers at @lebistrotdejan.nice, the more casual offshoot of @restaurant_jan! As always, @janhendrikvanderwesthuizen has pulled out all the stops to create an extraordinary dining experience, whether you drop in for a quick lunch or gather here for a festive dinner. 
My friend @kalicebrun and I feasted on oysters with citrusy sabayon, clams in herb sauce with grapefruit, and bergamot ceviche, before tucking into chicken pie in a delicate puff pastry and a gargantuan rib of beef (I couldn’t resist gnawing on the bone!).
We finished on a high note with three desserts between the two of us: South African malva pudding, chocolate-crusted choux pastry with rooibos crème anglaise, and a perfect tarte Tatin. 
Throughout our meal, Jan checked in often with every table, showing the attention to detail for which he is renowned. We can’t wait to return and try “le plat de mémé”, a family-style sharing dish that will change often!

Even for experienced cooks, seafood can be an inti Even for experienced cooks, seafood can be an intimidating subject. That is sure to change after a few days with Annie, our guest chef from @myfishkitchen in Cornwall! The daughter of a fisherman, Annie has worked with fish all her life, first as a fishmonger and then as a teacher for the past 15 years.
This month, Annie and I hosted our first two Fish Camps, which sold out almost immediately once we announced our collaboration. Over the course of three days, our fish-loving students learned to clean, fillet and cook 13 different types of Mediterranean fish and shellfish, including sardines, mackerel, amberjack, sea bream, squid, cuttlefish and scallops, to name a few. 
For each of the fish preparations, I concocted a salad or vegetable dish that would best complement its flavor and texture, using the most beautiful seasonal vegetables from local farms. 
Our Fish Camp included two visits to the fish stalls at Libération market, where students learned to spot the freshest of the catch on display, and a field trip to the fishing port of Cros de Cagnes, where local fisherman Flavien answered all our questions about fishing on the Côte d’Azur. 
Besides developing new skills, our students had a lot of laughs — there is nothing like cooking and eating together over several days to forge new friendships!
Annie and I will be holding two more Fish Camps in February and early March, which is Carnival season in Nice. The first is sold out, but the second, from February 27 to March 3, opened for bookings today! Visit my website www.petitsfarcis.com for more details and to book.

I’m back in Nice after leading another Southern I’m back in Nice after leading another Southern Morocco Culinary Adventure, and it’s taken a few days for me to come back down to earth. 
Our trip took us from the cosmopolitan yet chaotic city of Marrakech over the Atlas Mountains to Ouarzazate, famed for film productions such as Gladiator and Game of Thrones.
After making couscous with a big-hearted family in a palm oasis, we continued south to the Sahara desert, where we rode dromedaries to the perfect picnic spot and learned an ancient Touareg technique for cooking bread in the sand.
Then we drove through the Souss Valley to the Atlantic coast, where the climate, atmosphere and architecture changed dramatically, revealing Portuguese and French influence. After feasting on fresh-caught fish cooked on the grill in Essaouira, we returned to Marrakech, stopping at an argan cooperative along the way.
