Embark on a fascinating sensory experience of the Wild Riviera with Kalice
Karine Brun (also known as Kalice) is a chef, herbalist and writer who grew up in the village of Saint Etienne de Tinée, in the mountains behind Nice. An expert on wild plants who leads foraging walks, she has collaborated for years with Les Petits Farcis as a food tour guide and cooking teacher.
During this class you will:
● Learn about the rustic cuisine of the Wild Riviera (the countryside and mountains around Nice)
● Explore the herbs traditionally used in Niçoise cuisine — their flavors, medicinal properties, and impact on our well-being
● Taste infused oils, lavender honey, candied flowers (rose, jasmine, violet), fresh cheeses, and preparations based on wild plants (chickpea pancake with herbs or spices, crème brûlée with lavender, poached fruits, etc.)
● Taste local drinks (with or without alcohol) infused with herbs and other plants
● Prepare an aromatic salt for cooking, which you will take home.
● Create your own Wild Riviera herbal infusion to take home
● Take part in a blind tasting of local herbs and flowers, which will vary according to the seasons
This class is for anyone who wants to learn more about using herbs and flowers in the kitchen, from beginners to advanced cooks. Children aged four and up are welcome to participate. If you wish to take this class on a different day, ask us about a private class (minimum cost: 380 euros).
