In this class, resident pastry chef Sophie Lim shares her techniques for making perfectly puffed-up choux pastries every time, infusing them with local flavors that change with the seasons.
After attending the course, you will have learned how to make choux pastry, pastry cream, and a variety of elegant finishes and master techniques including baking, piping, and filling under Sophie’s expert bilingual guidance (she grew up in France and has lived and worked in Melbourne). Students are provided with a recipe book to take home, along with a box of their creations.
Possible flavors include: Vanilla and orange-flower water, Lemon and thyme, Salted butter caramel, Strawberries and cream.
