Would you like to incorporate more vegetables into your diet, but don’t know how to make them seem new and interesting, or appealing to children? Are you mystified by some of the vegetables on display at the markets in France? Do you wish you knew more about cooking with the seasons? Then this class is for you!
Drawing on the vast array of vegetables, herbs and spices available in the Mediterranean and specifically the south of France, this class will teach you fresh and exciting ways of cooking with vegetables so that they become a staple of your daily diet.
In each class, we prepare about five to six recipes using vegetables Rosa has found at the market that morning. The recipes may include dairy products and eggs, but please let us know if you would prefer a vegan meal.
The recipes change every week, so you can sign up for one or a series of classes — please contact Rosa if you would like a discount for three or more classes.
Rosa is a trained dietary counsellor with a diploma from the Institute of Health Sciences in Dublin, and peppers the class with science-based nutritional advice. She believes that there is no single “perfect diet”, but that everyone can benefit from eating plenty of fresh, seasonal produce prepared and eaten with care.
At the end of the class, you will sit down to a meal and enjoy the array of colorful dishes you have prepared, with some local organic wine!
